The different temperatures of the gases around the burning match causes the index of refraction of the light passing through them to bend that light in different directions. The phenomenon is called Schlieren, like the shimmer of light above hot pavement. It's hard to see the Schlieren around a burning match but you can arrange mirrors in a certain way to separate the light passing through the Schlieren and use color filters to produce beautiful, dramatic photos.

Look into the orange part of the flame. Do you see a skull? See the eye sockets? Eerie.
