No Poppy, the source didn´t say which animal it was...beaver was just my guessing. It could be a muskrat. Like you said, it´s hard to say sometimes.

I tasted beaver once. Next time I see it on the menu, I'll pass.

..beaver..muskrat...nutria...doesn't matter to Boudreaux....a good gumbo recipe'll work for just about anything........

Did the source really say ‘beaver’? I don’t think this is a beaver but a Muskrat (Ondatra zibethicus). Here’s one pic of a muskrat for comparison: Beaver (Castor Canadensis): Photos can be deceiving because you cannot tell how large the animal is. :-)
