Anteaters are quite different from Aardvarks. These are the latter.

According to some dictionaries/encyclopaedias, an aardvark eats ants and thus can be classed an anteater. Strictly speaking, aardvarks eat termites, and the compiler of one of my books, at least, can be classsed an idiot. Thank you, Fhuaran, for straightening me out.

I'm afraid Anne is mistaken. Although these animals superficially resemble aardvarks, they are in fact Louisiana Swamp Hogs, a breed specially adapted to life in the marshy terrain of their native state. Their long snouts enable them to breath while submerged in bayous, their wide feet and splayed toes prevent them from sinking into the boggy ground, while the creature's long, sensitive ears allow it to detect the approach of predators. These animals are considered a delicacy by the French-speaking Cajun people who inhabit the region, among whom it is known as the cochon marais. It is a favorite ingredient in gumbo, etouffee and boudain. It tastes, the colorful locals maintain, just like chicken. The fiesty little mammal is also the mascot of the South Eastern Louisiana School of Mines,the locally renowned Mighty Fighting Swamp Hogs. The Louisiana Swamp Hog is not currently listed as an endangered species.
